INGREDIENTS
1 sachet Colman's Chinese Style Curry Seasoning Mix
400g diced chicken breast
4 sprays low-calorie oil
1 medium onion, diced
1 red pepper, diced
40g frozen peas
300ml water
Fry the chicken in oil until sealed. Add the onion and pepper then fry on a high heat for a further two minutes. Thoroughly mix the Colman’s seasoning with 300ml of cold water and bring to the boil in a saucepan, stirring until smooth. Add the rest of the ingredients. Simmer for 10 minutes or until the chicken is cooked.
ALTERNATIVE The Chinese Chicken Curry seasoning sachet is EVU certified Vegan. For a meat-free alternative, swap the chicken for diced firm tofu, coat in corn flour, fry in low-calorie oil for 2-3 minutes until golden, and follow the remaining instructions on this pack.
